The students in the Gastronomy class at @korinthefterskole had the opportunity to experiment with algae in cooking class on February 18th when a team from AlgaeFood was visiting.<\/p>\n

The day began with a brief theoretical introduction to the biology of algae and their use in food. Subsequently, there was a playful activity in which the students were asked to sort different foods according to their climate footprint (kg CO\u2082\/kg food). At the same time, we discussed that CO\u2082 is not the only factor when it comes to sustainability and the climate impact of food. \ud83c\udf0d<\/p>\n

In the kitchen, the students were then able to experiment with different fresh and dried algae species, and three delicious dishes were created:

\n\ud83c\udf5c Ramen
\n\ud83e\udd65 Thai curry with mussels<\/p>\n
