Bubble tea made from algae with pupils from Dalumskolen in Odense

A key part of the AlgaeFood project involves developing and testing educational materials about algae and seaweed.

Throughout 2025, biologists at Fjord&Bælt have developed a series of exciting and educational activities that can be adapted for different year groups and subjects.

On January 28th, some of these activities were tested by pupils from Dalumskolen in Odense – with great success!

The pupils gained insights into how algae are already used in the food industry, for example, as thickening and stabilising agents. They worked hands-on with alginate, which is derived from red algae and can form tiny, spherical bubbles in a chemical process with calcium.

This is exactly the same principle that is used for bubble tea – and yes, that was precisely the students’ task!
