Kulinarisk Sydfyns

AlgaeFood played an important role at Kulinarisk Sydfyn's large food market in Svendborg on 28-29 June 2025. Algae was the recurring theme at the market, which is one of the largest in Denmark. No fewer than 7 food producers presented various seaweed products.

Guests were treated to a very special experience when renowned chef Daniel Guldmann, who coaches the Danish national culinary team, created culinary marvels with seaweed together with the restaurant "Vi To" from Svendborg, Skarø Ice Cream and Havsmag from Langeland 🤩.

Long tables were set up on the quay and four dishes of Nordic seaweed were served for lunch.

⭐️ MENU ⭐️

👨‍🍳 Pollock fillet in seaweed pesto on a crispy base with horseradish butter and beetroot cream

👨‍🍳 Pickled grilled asparagus with poached egg, smoked seaweed hollandaise and seaweed salad

👨‍🍳 Monkfish with butter-pickled mushrooms and seaweed broth on seaweed threads, hazelnuts and salted cabbage. Served with grilled salad with sea mustard vinaigrette

👨‍🍳 Ice cream with and without seaweed from the island of Skarø, served with sweet strawberries

On Sunday, market visitors had the opportunity to try preparing seaweed themselves. Of particular interest was the pickling of bladderwrack, prepared in the same way that grandma used to pickle cucumbers in a sweet and sour, savoury vinegar sauce.
It is estimated that 5 - 6,000 guests visited the market.
