From Ramen to Thai Curry: Students cook with algae

February 18

The students in the Gastronomy class at @korinthefterskole had the opportunity to experiment with algae in cooking class on February 18th when a team from AlgaeFood was visiting.

The day began with a brief theoretical introduction to the biology of algae and their use in food. Subsequently, there was a playful activity in which the students were asked to sort different foods according to their climate footprint (kg CO₂/kg food). At the same time, we discussed that CO₂ is not the only factor when it comes to sustainability and the climate impact of food. 🌍

In the kitchen, the students were then able to experiment with different fresh and dried algae species, and three delicious dishes were created:
🥢 Okonomiyaki (Japanese hearty pancake)
🍜 Ramen
🥥 Thai curry with mussels
